Taco Rice Bowl

Swap the tortilla for a bowl to make our delicious Taco Rice Bowl! This 20-minute recipe can be made in so many different ways to satisfy your whole family. It is a delicious medley of seasoned meat, fresh vegetables, and zesty toppings, all served in a convenient bowl.


Feeds 1-2 people.



  • 1 tbsp. of olive oil
  • 1 cup of SmartRice
  • 3 tbsp. of water
  • 1 pound of ground beef
  • 1 pack of taco seasoning
  • 1 avocado
  • Pico de gallo
  • 1 can of sweetened corn
  • Shredded cheddar or mexican blend cheese



  1. Heat oil in a skillet over a medium heat. Add in ground beef and cook all the way through.
  2. Drain, and in your taco seasoning and water. Mix together until the meat is fully covered.
  3. In a bowl add in rice, meat, sliced avocado, corn, pico and cheese. You can swap or add any additional toppings that you like!
  4. Enjoy!
