Swap the tortilla for a bowl to make our delicious Taco Rice Bowl! This 20-minute recipe can be made in so many different ways to satisfy your whole family. It is a delicious medley of seasoned meat, fresh vegetables, and zesty toppings, all served in a convenient bowl.
Feeds 1-2 people.
Ingredients:
- 1 tbsp. of olive oil
- 1 cup of SmartRice
- 3 tbsp. of water
- 1 pound of ground beef
- 1 pack of taco seasoning
- 1 avocado
- Pico de gallo
- 1 can of sweetened corn
- Shredded cheddar or mexican blend cheese
Directions:
- Heat oil in a skillet over a medium heat. Add in ground beef and cook all the way through.
- Drain, and in your taco seasoning and water. Mix together until the meat is fully covered.
- In a bowl add in rice, meat, sliced avocado, corn, pico and cheese. You can swap or add any additional toppings that you like!
