Sauce Ingredients:
- ¼ cup of granulated sugar
- ⅓ cup of apple cider vinegar
- ¼ cup of ketchup
- 3 tbsp. of soy sauce
- ½ tbsp. of sesame oil
- 1 tbsp. of brown sugar
- 2 cloves of garlic, minced
- 1 tbsp. of cold water
- ½ tbsp. of cornstarch
Chicken Ingredients:
- 1-2 chicken breasts
- 2 tbsp. of cornstarch
- Salt and pepper
- 2 tbsp. of olive oil
- 1 cup of SmartRice
Directions:
- Bring sugar, apple cider vinegar, ketchup, soy sauce, sesame oil, brown sugar and garlic to a boil in a medium saucepan over medium-high heat.
- In a separate bowl, whisk together water and cornstarch. Once mixed well, add the cornstarch mixture to the saucepan. Let this simmer over a low heat for 5 minutes; mix regularly.
- In a ziploc bag, add chicken, cornstarch, salt and pepper and seal. Toss this together.
- Once chicken is cooked, reduce heat to low and add in the sauce mixture. Stir until chicken is coated evenly. Let this simmer for a minute or two.
- Serve over a bowl of SmartRice and enjoy!
