20 Minute Sweet & Sour Chicken and Rice

Sauce Ingredients:

  • ¼ cup of granulated sugar
  • ⅓ cup of apple cider vinegar
  • ¼ cup of ketchup
  • 3 tbsp. of soy sauce
  • ½ tbsp. of sesame oil
  • 1 tbsp. of brown sugar
  • 2 cloves of garlic, minced
  • 1 tbsp. of cold water
  • ½ tbsp. of cornstarch

Chicken Ingredients:

  • 1-2 chicken breasts
  • 2 tbsp. of cornstarch
  • Salt and pepper
  • 2 tbsp. of olive oil
  • 1 cup of SmartRice


  1. Bring sugar, apple cider vinegar, ketchup, soy sauce, sesame oil, brown sugar and garlic to a boil in a medium saucepan over medium-high heat.
  2. In a separate bowl, whisk together water and cornstarch. Once mixed well, add the cornstarch mixture to the saucepan. Let this simmer over a low heat for 5 minutes; mix regularly.
  3. In a ziploc bag, add chicken, cornstarch, salt and pepper and seal. Toss this together.
  4. Once chicken is cooked, reduce heat to low and add in the sauce mixture. Stir until chicken is coated evenly. Let this simmer for a minute or two.
  5. Serve over a bowl of SmartRice and enjoy!
