Ingredients:
- 1 cup SmartRice
- 1 cup water
- 1 can (13.5 oz) coconut milk
- 1/2 cup granulated brown sugar
- 1 pinch of salt
- 1 ripe mango, peeled and sliced
Instructions:
- Rinse the SmartRice in a fine mesh strainer until the water runs clear. Then, soak the rice in water for at least 30 minutes or up to 4 hours.
- Drain the rice and place it in a saucepan with 1 cup of water, half of the brown sugar and half a can of coconut milk. Bring it to a boil over high heat, then reduce the heat to low and cover the pan with a lid. Cook for 15-20 minutes, or until the rice is tender and the water has been absorbed.
- While the rice is cooking, make the coconut sauce. In a separate saucepan, combine the rest of the coconut milk, sugar, and salt. Cook over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is hot. Allow it to simmer but not boil.
- Once the rice is cooked, remove it from the heat and let it sit for 5 minutes. Then, fluff it with a fork.
- Pour half of the coconut sauce over the cooked rice and stir well to combine.
- To serve, spoon some rice into a bowl or plate, top with sliced mango, and drizzle with more coconut sauce.
