Ingredients:
- ½ cup of SmartRice
- 4 Sundried Tomatoes Chopped
- 1 Yellow Pepper Diced
- ½ Cucumber Diced
- ½ Red Onion Diced
- Cherry tomatoes
- ½ cup of sweetcorn
- ⅓ cup of olives
- 2 tablespoon Pine Nuts
- 2 tablespoon Fresh Basil chopped
- 4 tablespoon Olive oil
- ⅓ lemon juice
- ½ tablespoon Italian Seasoning/ Dried Herbs mix of Oregano, Thyme, Basil, Parsley, Sage, Red Pepper flakes
- 1 teaspoon minced garlic
Directions:
- Cook your rice first to give it enough time to cool before adding additional ingredients.
- Mix the olive oil, italian seasoning, lemon juice and garlic together to make the dressing.
- In a large bowl, mix together rice, peppers, corn, tomato, onion, cucumber, olives, pine nuts, and fresh basil.
- Add dressing in and mix!
