  • 2 cups cooked brown SmartRice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup tomatoes, diced
  • 1 cup bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro (optional)
  • Juice of 1-2 limes
  • 1-2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste


  1. In a large mixing bowl, combine the cooked brown SmartRice, black beans, corn, tomatoes, bell pepper, red onion, and cilantro.
